Peanut Butter Chocolate Chip Cookies

Who doesn't love warm, chocolatey, peanut butter cookies?! Well my peanut butter chocolate chip cookies are not only delicious, but they are healthier than your regular cookie! Made with oat flour, naturally sweetened, and oil free, these little bites of heaven can be enjoyed guilt free! Dig in!

I remember visiting my grandparents in Kansas as a child and my grandma always had her famous homemade peanut butter cookies ready for my brothers and me to devour. So, needless to say, peanut butter cookies are my favorite! They instantly transport me back in time to memories with my family. Not to mention, they taste incredible and this healthier version makes it possible to eat multiple without remorse!


My Peanut Butter Chocolate Chip Cookies are made with natural peanut butter and pure maple syrup as the sweetener. The dark chocolate morsels sweeten up the cookie as well, while the chopped peanuts add texture and crunch! A little vanilla extract and some baking powder to poof them up, and you have a scrumptious cookie.


The flour that I decided to use for this recipe is oat flour. If you don't have oat flour, you can do what I did and just grind up a heaping cup of oats in the food processor until it becomes the texture of flour. Oat flour wont be as smooth as regular bleached flour, but it should resemble the texture in the photo above. I love oat flour in this recipe because it adds a chewiness to the cookies, keeps them super soft, and the oats make the recipe healthier due to the added fiber. We all know fiber is crucial for heart and digestive health and it lowers cholesterol, among many other benefits. These cookies are calorically dense and great for boosting energy levels with healthy carbohydrates!


With only seven ingredients, the perfect balance of sweet and salty, and just a dash of childhood bliss, these cookies have quickly become a staple in my kitchen! I love to munch on mine with a glass of oat milk or a warm cup of coffee! Hope you enjoy!


Peanut Butter Chocolate Chip Cookies

1 cup peanut butter, creamy, natural

1/2 cup maple syrup, pure

1/2 tsp vanilla extract

1 cup oat flour

1/2 tsp baking powder, double acting **

dash of salt

1/2 cup dark chocolate morsels **

1/3 cup peanuts, dry roasted unsalted, chopped


Directions

1. Preheat oven to 350°F (~175 °C)

2. In a large mixing bowl, add the peanut butter, maple syrup, and vanilla extract and mix until well combined.

3. In a food processor, add a heaping cup of rolled oats and grind until it is a fine flour. Add in the baking powder and salt and pulse a couple times to mix all the dry ingredients.

4. Add the flour mixture into the peanut butter mixture and combine well, but don't over mix.

5. Throw in the chopped peanuts and dark chocolate morsels and fold to combine.

6. Roll the dough into about 1 1/2 inch balls and place on a parchment lined baking sheet. Push down with a fork to make a crosshatch on top of the cookie.

7. Place in preheated oven and bake for 14 minutes. **

8. Let cool completely on a cooling rack and enjoy!


Notes

** If you only have single-acting baking powder, that will work as well, just make sure you work a little more quickly getting the cookies into the oven or else they might turn out a tad bit denser.

** The dark chocolate morsels I use are by the brand Enjoy Life.

** They should be done when the bottoms are just slightly golden brown, but the tops will still be pretty soft. They will harden up as they cool.
